Vegan Mini Chocolate, Peanut butter Protein Cheesecakes

Looking for a tasty, healthy dessert? Look no further! These creamy chocolate peanut butter protein cheesecakes are the perfect portion for one person. That's if you can stop at just one! 

Ingredients:

½ a cup of cashews (soaked for at least 30 mins in water)

4 tbsp of maple syrup

1 tbsp of cocoa powder

1 tbsp of peanut butter (must be smooth)

1 tbsp of chocolate flavoured protein powder (we used Misfits)

150g of vegan cream cheese


For the base:

2 tbsp of classic chocolate porridge 

2 tbsp of walnuts 

2 heaped tsp of coconut oil, melted 

1 tbsp of maple or honey 



Method:

Blend the base ingredients together then spoon into the ramekin dishes, using the back of a spoon to flatten it down

Next, blend all the remaining ingredients in a blender until smooth

Pour the cheesecake mixture into the ramekin dishes and pop into the fridge to chill.

Top with a protein ball and some cocoa nibs or choc chips and dig in!
