Lemon and Pistachio Mousse
Looking for the ultimate palette cleanser? This gorgeous vegan lemon and pistachio mousse is the perfect pudding! The perfect combo of sweet & tart, this is guaranteed to be a crowd pleaser.
Ingredients:
Zest of 1 lemon
Juice of 1.5 lemons
4 tbsp of maple syrup
150g of vegan cream cheese (we used Nush)
½ cup of cashews (soaked in water for at least 30 mins)
Method:
Add all ingredients to a blender and blend until smooth
Pour into 2 ramekin dishes
Pop into the fridge to cool and set (ideally for an hour)
Top with lemon and pistachio protein balls, chopped pistachio nuts and more lemon zest
Tuck in!
