Happy Pancake Day!
Of course, we’re celebrating in the only appropriate manner, pancakes! Topped with creamy peanut butter, fresh fruit and Protein Balls, they’re the ultimate way to start your day.
Ingredients
100g High Protein Low Sugar Porridge from The Great British Porridge Co (blended into oat flour)
1tsp Bicarbonate of Soda
100ml Plant-based milk
2tbsp Coconut sugar
1tsp Vanilla extract
Yogurt/peanut butter/frozen fruit/Protein Balls to top

Method

Start by taking your Apple and Cinnamon oats and giving them a little whizz in the blender. Once you’ve created a fine oat powder, transfer this into a large bowl along with the bicarbonate of soda.

In a separate bowl, whisk together the plant-based milk, sugar, and lemon juice until it begins to thicken. Once well combined, add this into the bowl with the dry ingredients and give it all a good whisk together.

In a large nonstick pan, heat a tsp of coconut oil and begin adding your pancake batter into the pan, roughly the size of a bottle top. Cook for around 2 minutes on each side or until golden.

Serve up with your yogurt, peanut butter, and frozen fruit, and enjoy!
