We’ve been busy bees in the kitchen this week getting ready to bring you this mouthwatering cookie recipe, just in time for National Choc Chip Cookie Day; yes, there is such a thing! 

Complete with our Classic Chocolate Brownie Keto Balls, these cookies are soft, and chewy and we can almost guarantee that they’ll be a hit with the family too, after all, who doesn’t like cookies? Free from any refined sugar, this tasty tea dunking treat will ensure you stay well within your keto macronutrients for the day. 

Choc Chip Keto Cookies

Ingredients: 

  • 100g Salted butter 
  • 2 x Bags Classic Chocolate Keto Balls 
  • 2tsp Vanilla extract 
  • 1 Large egg 
  • 180g Almond flour 
  • ½ tsp Baking powder 
  • ½ tsp Xanthan gum 
  • A pinch of salt 
  • 50g Sugar-free chocolate chips 

Method: 

  • Start by melting the butter in a saucepan over a medium heat. Once melted add the vanilla and the egg and mix well. 
  • Add in the almond flour, baking powder, xanthan gum, and salt and beat until well combined. 
  • Once a cookie dough consistency has been reached, knead in the chocolate chips and chopped keto balls. 
  • Evenly divide into 12 portions and add to a lined baking tray before placing in the oven for around 12 minutes. 
  • Once they’re cooked, remove them from the oven and serve up with a cuppa!
