Blueberry & Chia  make at home VEGAN & gluten free Protein balls

Protein Balls are a great way to give your body an instant energy boost as well increasing your daily protein count. These make at home protein balls are the perfect way to fill your body with raw super foods, such as chia seeds and coconut nectar. Each ball is full of all the good stuff like blueberries - which are packed with antioxidants, vitamin C, fibre, vitamin E and calcium. To double up on your dose of Omega 3 and calcium roll each ball in chia seeds. We organic brown rice and organic pea protein powder, these balls are the perfect vegan power pack!

Ingredients

Medjool dates (pitted) x3

Coconut nectar or agave  or honey or olive oil x2 tbsp.

Blueberries (dried) x1  cup

Organic brown rice protein powder x1 tbsp.

Organic pea protein  powder x1 tbsp.

Almond butter  ½ x cup

Juice of half a lemon  plus zest

Chia seeds x 1 tsp

Method

1. Pour all ingredients into a large mixing bowl and kneed until the mixture starts to look ‘dough-like’

2. Scoop a ball sized amount of the mixture into your hands (about the size of a 10p coin) and roll into a ball. Repeat this step until you have used up all of the mixture

3. Roll the finished protein balls in chopped almonds, chia mix or poppy seeds. Ensure that all protein balls are stored in an airtight container in the fridge for at least one hour after mixing. Once cold they are good to go for a quick breakfast, snack, or afternoon treat...ps the kids love 'em!
